My Easy Recipes

My mother gave me my first cookbook, Fun to Cook Book for children, when I was six years old. It now resides with my daughter, Tiffany. When I married in 1968, she gave me the Betty Crocker Cook Book printed in 1961. Both are pictured at right. I still have my Betty Crocker cookbook. It is now worn, stained and much used. I am still using the recipes from this beloved cookbook today. Because cooking has not always been my favorite thing to do, I have modified and collected recipes over the years that are easy and perfect for busy moms, grandmothers and ministers, of which I am all three. I also am a Lifetime Weight Watchers member and will list Points Plus Values for recipes when I can. As God has always said to me, "Keep it Simple, Forshia" I will endeavor to keep my recipes easy. I love easy! I believe you can enjoy life and still get it all done! Just make sure you put God first.

Key Lime Pie
1 box sugar free lime jello
1/4 cup boiling water
2-8 oz. containers lime yogurt
8 oz. fat free cool whip
1 - 9" low fat graham cracker crust

Dissolve jello in boiling water. Cool slightly. Stir in yogurt. Fold in cool whip. Pour into crust and chill. Eat!
Note: This will work with any flavor so long as the jello and yogurt flavor matches. Lemon, strawberry, blueberry, etc. Weight Watchers: 7 PPV per slice (1/8 pie)
Bavarian Pitas
1 lb. ground beef
1 small onion chopped
1 tbsp. olive oil
3 tsp. ketchup
2 1/2 tbsp. water
1/2 tsp. ground all spice
Good dash of cinnamon
1/4 tsp. salt
Dash of pepper
6 large pita breads cut in half
Chopped tomatoes, chopped green onions, chooked cucumber, crumbled feta cheese

Saute beef and onion till brown. Drain. Add next 7 ingredients. Reduce heat and simmer 5 minutes stirring occasionally. Fill and top with veggies and cheese.
Mug Cake
1 box Angel Food Cake mix
1 box any flavor cake mix

Mix both cake mixes together thoroughly. Measure 3 Tbsp. cake mix in mug. Add 2 Tbsp. water and mix. Microwave 1 minute. You can add a few M&M's or a drizzle of chocolate syrup or caramel syrup according to what flavor cake mix you use. Kids love this recipe! 
Coca-Cola BBQ
2 pork loins or a boneless pork roast
1 can Coke (diet can be used)
1 cup ketchup
1 pkg. hamburger buns

Mix Coke and ketchup well. Pour over pork in crock pot. Cook 10 hours. I stir mine now and again. Break up pork in pot. Serve on buns. Great with your favorite coleslaw. Mine is KFC. How easy is that!
Note: If you do not have a crock pot, put in dutch oven on 325 and cook all day. Check on it, though. 
Meatloaf in a Flash
1 lb. ground beef (I like to use a mixture of beef & pork or turkey)
1 cup water
1 egg
1 box Stove Top Stuffing Mix (unprepared-any flavor)

Preheat oven to 350 degrees. Spray 9 x 13 pan with nonstick spray. Break meat into chucks and drop in pan. Add rest of ingredients. Mix with hands, which is best, or with utensil. Form into loaf in center of pan. Bake 45 minutes. This is really good and oh so easy! My son, Dax and grandson, Connor, love it. He loves to put a chunk on a fork and dip it into ketchup. Pumpkin Mousse

1 box Butterscotch pudding mix, fat free, sugar free
1 15 oz. can plain pumpkin
1 8 oz. tub fat free cool whip
1 tsp. or to taste pumpkin pie spice

Mix all ingredients together. Yummy! Weight Watchers: 1 cup=3 PPV

Easy Holiday Pretzel Candy

1 bag Butter Snaps pretzels (shaped like window panes)
1 bag chocolate & vanilla candy melts (used for candy making)
Candy Corn and/or Candy Pumpkins or
M&M's in seasonal colors or
Reeses Pieces

Cover a round dinner plate with a layer of pretzels.  Place one candy melt on each pretzel.  Microwave 30 seconds on high.  Turn 1/4 turn and microwave 30 seconds more.  According to the power of your microwave, you may have to microwave 30 seconds more rotating 1/4 turn.  Candy should be soft.  Press 1 Candy Corn/Candy Pumpkin in center of each candy melt.  I usually make half of each.  Let cool completely.

Use your imagination.  Use different color M&M's for different holidays…pink and red for Valentines Day, etc.  You can also use different flavors and colors of candy melts.

3 plates full will fill a quart wide mouth canning jar if you want to give as a gift.  Coordinate with a fabric lid cover.  Tie with raffia.
